Greek chicken salad with greens.

This recipe creates the perfect summer dish.  Light, delicious and very nutritious.
With only 500 calories 18 grams from fat,  32 grams from Carbohydrate, 30 grams from protein, 730mg sodium, 7 grams of saturated fat, and 0 trans fat.

On top of a bed of crisp romaine lettuce place a 4 oz organic chicken breast lightly browned in olive oil. Sprinkled on top, to taste are olives, feta cheese and walnuts.

In less the 20 minutes experience the perfect summer dish, light, delicious and very nutritious.

Ingredients:
2 TBS olive oil
4oz organic chicken breast
Salt and pepper to taste
2 cups chopped romaine lettuce
1 pita bread
4-6 olives
1 oz or 2 TBS feta cheese
1 TBS walnuts

Directions:
Salt and pepper the chicken
Brown chicken in 1 TBS of olive oil for approximately 10 minutes
Flip and brown for another 10 minutes or until done.
Chop lettuce onto serving plate
Slice chicken and place on top of lettuce
Sprinkle plate with olives, feta cheese and walnuts
Dress with olive oil and a dash of salt and pepper
Cut pita bread into 4s and add as side

serves 1
